It's really, well, YUM-O (sorry Steph).<br /> <br />* Exported from MasterCook *<br /><br /> Balsamic Chicken<br /><br />Serving Size : 4 <br /><br /> Amount Measure Ingredient <br />-------- ------------ --------------------------------<br /> 4 chicken breast halves without skin<br /> 2 teaspoons lemon pepper<br /> 1 1/2 teaspoons olive oil<br /> 1/4 cup chicken broth<br /> 1/3 cup balsamic vinegar<br /> 2 cloves garlic -- minced<br /> 3 teaspoons margarine<br /><br />Pound chicken to 1/4 inch thick. Coat both sides of chicken thoroughly with lemon pepper. Heat olive oil in large frying pan over medium heat and cook chicken on both sides until brown and cooked through, about 7 minutes per side. Remove to plate and keep warm in a warming oven.<br /><br />Mix broth, vinegar, and garlic. Pour into frying pan, scraping up brown bits. Simmer until reduced by about 1/3. Stir in margarine. Serve sauce over chicken.
