Peg's Cheesy Potato Soup



My sister-in-law Peggy made a delicious pot of this soup to add to our Christmas feast and it was WONDERFUL! I even added some of my leftover ham to it the next day and that was great too.

You must give it a try. This is comfort food at its best!

YOU WILL NEED:
3 c. water
4 chicken bouillon cubes
2 1/2 cups cubed potatoes
1 cup sliced celery
1 c. minced onion
1 cup diced carrot


Boil all together until veggies are tender.

Then add:

8 oz. cubed Velveeta cheese.


Let melt and remove from heat.
Add:

2 cups milk
2 cans cream of chicken soup
.

Heat through until warm.

*I also added leftover ham, cubed, and some frozen (thawed brocoli) when I served it the second time.

Serve with crusty bread...and loosen your belt buckle. You're gonna' want seconds!

Chery'ls Secret recipe Cheese Soup




My wonderful friend Cheryl served this soup to me awhile back and I was SHOCKED when she gave me the list of ingredients. It tasted wonderful and had a "from scratch" taste that I just had to share.

This is her recipe that she just sent to me- photos are mine from our little luncheon awhile ago.

ENJOY!



YOU WILL NEED:

1 can cheddar cheese soup,
1 can any other kind of cream soup you like (I use cream of mushroom)
2 soup cans filled with beer,
Shredded cheese, any kind as much as you want,
couple of dashes worcestershire sauce and liquid smoke,
pepper to taste.

Heat on top of stove until cheese melts or cook in crock pot on high for a few hours. Add REAL bacon bits and croutons before serving. DELISH and SOOO EASY".

*For this serving, Cheryl cut up day old baked french bread, placed them on top of cooked soup in bowl, sprinkled with cheese and microwaved till cheese melted.

Healing Soup



For Many years, when anyone was sick in the family, my Mom always made a pot of her healing soup. It has become a special request now anytime someone in the family is ill, and also when we are all well, but needing some of her special soup made from her loving hands.

I don't know what it is- maybe the combination of her love and prayers while she's preparing it- but I swear when I enjoy the first warm spoonful, I start feeling better...and very loved.

This is a tradition I want to pass along to all of you, especially now, during this crazy flu season- but don't wait till everyone's sick- give them a warm bowl while they can really enjoy the delicious flavors.





2 beef shanks (with lots of meat on them)

Cover with water then cook on boil low for about one hour.

Add 1 onion, chopped. Add broth (3 cans chicken) and 1 can stewed tomatoes and 2 T. chicken bouillon and cook for at least least 30 minutes. Add 5 or 6 cubed potatoes- and celery chopped and carrots, sliced (2 each) let cook on med. another 20 minutes or until potatoes are tender. Add salt and pepper to taste.

There's no place like home...especially in Autumn, with a bowl of soup in hand.



I've been busy around the house welcoming my favorite season.





I love the way my home feels all cozy when it's cool and crisp outside






and warm and inviting on the inside.





I wish you could all come visit- I'd make you a nice pot of hot mulled cider, and sit and relax with you on my sofa while we await a warm supper.

Nothing says "Welcome Autumn" like a pot of soup simmering on the stove.

This recipe I just threw together and Big Al ate 3 bowls (one right after the other) then another a little later, so I guess it's a keeper.

It's close to a Poor Boy Soup, and it's very economical and most ingredients are staples so I didn't even have to shop for this recipe.



If you want to give it a try, here's what you'll need:
1/2 onion (minced)
3 tsp. minced garlic
2 Tbsp. butter


Cook onion and garlic in butter until onion is transparent.
Brown ground beef and mix with garlic and butter and all to a large soup pot.

Add: 3 cans chicken broth and 2 bouillon cubes (That have been dissolved in boiling water), 1 can stewed tomatoes, 1 small can (8 oz.) tomato sauce, 1/2 can sweet corn.

Bring to a boil then simmer on low for at least 30 minutes. Add cooked pasta (I used spaghetti) and heat through.

Serve with crusty bread.

Enjoy.

Fast and Furious Friday- Taco Chicken Soup



Soup season is here!

My friend Molly shared this recipe with me that was passed along to her from one of her Southern friends. It's quick to throw together but has the taste of a dish requiring much more preparation. My family loved it! If you find yourself in a pinch this weekend, this would be the perfect soup to warm your soul.

You will need:

5 cans chicken broth
3 bouillon cubes
5-6 cups cooked chicken (To speed up the prep time- you can use Tyson plain grilled chicken strips or use the meat from a fully cooked Rotisserie chicken at your grocery store)
2 pkg. of taco seasoning
1 can red beans
1 small can of green chili peppers
2 cans (10 1/2 oz.) stewed tomatoes
diced carrots (optional)
sliced celery (optional)
Dash hot sauce (optional)
Small bag egg noodles, boiled
Boil noodles separately, then bring other ingredients to a boil. Then add noodles Simmer on low about 20 minutes.

Serve with shredded cheddar, tortilla chips/strips, and/or grilled onions.

This is a mild tasting soup with a kick. If you need more heat, add more hot sauce or add your favorite hot pepper.

3 bowl Marvel Chicken Soup


I call this "3 bowl...soup" because the average number of bowls consumed by each person is 3 bowls! Yeah, it's THAT good!

This big pot of comfort was first introduced to me when my nephew passed away. A lady from church brought it to the house for the family. Honestly, we weren't eating much of anything during that time, but this soup, was eaten. And remembered.

We've all been serving it for years, and we've passed on the tradition of taking it to those who need a little comfort. It's no wonder that when I asked Big AL what he would like me to make for his supper while he was injured, he said, "Make 'The Soup'."

I always get recipe requests when I serve or give this soup to my friends.

What is the secret to the comfort you ask? Well, besides the proven healing properties in chicken soup, and the loving hands that prepare it, VELVEETA CHEESE is added for extra creaminess.

Creaminess=comfort.

If you want to share a bit of comfort, don't wait till cold weather hits- enjoy some comfort now. Just crank up the air!

You will need:


1 chicken-
3 chicken bouillon cubes
2 cups potatoes, diced
2 cups carrots, diced
2 cups celery, diced
1/4- 1/2 cup onions
2 cups COOKED rice
16 oz. Velveeta, cubed

Boil chicken, then remove from pot. (Remove skin and bones, shred meat and set aside) Strain broth. Add bouillon cubes to boiling broth, then add the vegetables. Bring to a boil, then cover and simmer till veges are tender. Add cooked rice, chicken and Velveeta and stir until cheese is melted. Add salt and pepper to taste and remove from heat.

Serve warm with Crusty bread and a salad.



* I had taken several pics of the soup, but I've been having a problem with my pics not all transferring over when I download them/upload them on the Kodak photo share. Does anyone know why this would happen? It only chooses random photos to transfer, and it is usually the photos I don't care for. Very frustrating!
