Corn Dog Muffins (a re-post- popular recipe)

I have seen this recipe EVERYWHERE! I remember making a casserole similar to this when my sons were young, and they loved it. So I thought I'd give this version a try.

Guess what? It takes exactly like a corndog. Exactly. So if you (and especially your kids) like corndogs, these little muffins would make a great treat for lunch.

They also go well with chili too, as a side dish.

I guess, they could also be an appetizer.

The kids (of all ages) will love these. This would also be a good beginner recipe for kids to help make.
Corn Dog Muffins (24)

You will need:

* 2 (8.5 ounce) packages cornbread mix
* 2 tablespoons brown sugar
* 2 eggs
* 1 1/2 cups milk
* 1 cup grated Cheddar cheese
* 9 hot dogs (*I cut mine in small rings)

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease muffin tins.*I used cupcake liners instead.

2. Stir together the cornbread mix and the brown sugar in a large bowl. Whisk the eggs and milk in a small bowl until smooth. Fold the eggs and cheese into the dry mixture until moistened; then add the hotdogs. Spoon mixture into muffin tins until 2/3 full.

3. Bake in a preheated oven 14 to 18 minutes, or until golden brown.
Serve with mustard and ketchup.

This made about 24 muffins. Sounds like a large amount, but they were gobbled up quickly. None were leftover!

NOTE: The average person will eat two of these. I, however, ate THREE, because I'm above average. 😊

Enjoy~ Everything in Moderation

Fast and Furious Friday- Taco Chicken Soup

Soup season is here!

My friend Molly shared this recipe with me that was passed along to her from one of her Southern friends. It's quick to throw together but has the taste of a dish requiring much more preparation. My family loved it! If you find yourself in a pinch this weekend, this would be the perfect soup to warm your soul.

You will need:

5 cans chicken broth
3 bouillon cubes
5-6 cups cooked chicken (To speed up the prep time- you can use Tyson plain grilled chicken strips or use the meat from a fully cooked Rotisserie chicken at your grocery store)
2 pkg. of taco seasoning
1 can red beans
1 small can of green chili peppers
2 cans (10 1/2 oz.) stewed tomatoes
diced carrots (optional)
sliced celery (optional)
Dash hot sauce (optional)
Small bag egg noodles, boiled
Boil noodles separately, then bring other ingredients to a boil. Then add noodles Simmer on low about 20 minutes.

Serve with shredded cheddar, tortilla chips/strips, and/or grilled onions.

This is a mild tasting soup with a kick. If you need more heat, add more hot sauce or add your favorite hot pepper.

THREE INGREDIENT THURSDAY- Pancake Syrup and Cherry Pancakes

Another Two-fer special!

It doesn't get any faster, cheaper or better than this.

For the pancakes
, just add a handful of thawed, drained, frozen cherries to your boxed pancake mix (that you only have to add water to!) and cook as directed on box.

For syrup
4 c. sugar
2 c. water (we're not counting the water )
1/2 c. brown sugar
1 tsp. maple flavoring

Place sugar and water in a saucepan and boil until mixture clears. Add flavoring and serve warm over pancakes. Can make chocolate syrup by adding cocoa to sugar for flavoring.

Enjoy a delicious breakfast that feels special but is nothing out of the ordinary!

FAST AND FURIOUS FRIDAY MEALS- Tequila Lime Taco Salad

This is not only a quick dinner, it was a throw together inspiration from items already in my fridge or pantry that I didn't have to go to the store to purchase.
The flavored salsa makes this meal, so you don't want to use just any ole salsa- go for the tequila Lime flavor! It gives it a little kick!

Perfect for a lazy weekend cook!

YOU WILL NEED:

1 lb.ground beef (brown and drain)

1 pkg. taco seasoning (plus water amount suggested on pkg.)
Add to beef.

3 T. Tequila Lime Salsa (I used Kroger brand)
1 can of red beans, drained.

Add to beef mixture and cook until heated through.

1 cup Shredded cheese (I used mozzarella -of all things- only because I was out of everything else- but I'd say cheddar would be best!)

Lettuce, tomato, black olives or your favorite taco toppings.

Salsa on the side.
Bag of Tortilla chips

Arrange Chips in large plate/bowl and cover with meat mixture and your favorite toppings.

ENJOY!
