FAST AND FURIOUS FRIDAY



A new weekly feature here on Fridays will be my FAST AND FURIOUS menus.

I'll feature a complete meal that can be ready to serve in 30 minutes or less.
Breakfast, lunch or supper menus will be included.

These will be meals that have few ingredients with LOTS of shortcuts for the busy cook, a cook who is just starting out in the kitchen or those who find themselves with a short amount of time to feed some hungry people.

I posted early this week, so I will link yesterday's menu for Bow Tie Pasta with Vodka Sauce and Chicken here.

  1. OK, now where in the world did you get the idea for a 30 minute recipe??Have at my Balsamic Chicken. It's really, well, YUM-O (sorry Steph).

    Balsamic Chicken

    Serving Size : 4

    Amount Measure Ingredient
    -------- ------------ --------------------------------
    4 chicken breast halves without skin
    2 teaspoons lemon pepper
    1 1/2 teaspoons olive oil
    1/4 cup chicken broth
    1/3 cup balsamic vinegar
    2 cloves garlic -- minced
    3 teaspoons margarine

    Pound chicken to 1/4 inch thick. Coat both sides of chicken thoroughly with lemon pepper. Heat olive oil in large frying pan over medium heat and cook chicken on both sides until brown and cooked through, about 7 minutes per side. Remove to plate and keep warm in a warming oven.

    Mix broth, vinegar, and garlic. Pour into frying pan, scraping up brown bits. Simmer until reduced by about 1/3. Stir in margarine. Serve sauce over chicken. Great with brown rice and steamed broccoli.

  3. I have a LOT of fast meals! If you look at my "Burpilicious Creations" section and go to my "mix-it-up" bowl creations, they're all super-fast and easy, and very very versatile, too!
